Onion Soup

   2      Qt            Nonfat Beef Broth
     1/2  Lb            Onion -- Sliced
   4      Tbsp          Margarine
   1      Tbsp          Flour
   7      Slices        Bread
     2/3  Cu            Gruyere Cheese -- Grated

Slice the onions fine and fry in butter, stirring frequently. As soon as they acquire a slight color sprinkle in flour and stir with a wooden spoon for 3 min. Add stock and simmer for 20 mins. Put slices of bread, dried in the oven. in a soup tureen or individual bowls. Sprinkle each slice with grated cheese. Pour soup over the bread. Sprinkle with grated cheese. Put in oven under broiler until cheese becomes golden.
