Deter's Whole Wheat Bread

Developed by Francie Deter from Socorro, this recipe produces a tall and light loaf of wheat bread. And I do mean tall, try the one-pounder first, just to be safe!

I -POUND LOAF

I cup water

1/4 cup canola oil

1/4 cup honey

11/2 cups whole-wheat flour

1 cup + 1 tablespoon Bread flour

I teaspoon salt

1/4 cup dry milk powder

1/4 cup vital gluten

I tablespoon yeast

 

11/2-POUND LOAF

11/2 cups water

1/3 cup canola oil

1/6 cup honey

21/4 cups whole-wheat flour

11/2 cups bread flour

11/2 teaspoons salt

1/3 cup dry milk powder

1/3 cup vital gluten

2 teaspoon yeast

3 tablespoons grain mix (King Arthur Flour 5 grain mix)
