March, 2002 "Put Up Your Cukes"
Ingredients:
1 cup low-fat sour cream (or plain yogurt)
1/4 cup chopped green onions
1 Tbsp lemon juice and sugar
1 Tbsp minced fresh dill
1/4 tsp salt
6 cups seeded & diced English cucumbers.
Preparation:
Split the cucumber lengthwise and scoop out the seeds
and membrane with a spoon. Salads made with seeded
cucumbers will stay fresh longer.
Combine all ingredients, except cucumbers, into a small
bowl. Cover and refrigerate for at least 30 minutes.
Add dressing to the diced cucumbers in a medium size bowl.
Stir well. Refrigerate until ready to serve.
Makes 6 servings.

April, 2002 "Miss American Thigh"
Ingredients:
1 cup grape jelly
3/4 cup ketchup
1/2 cup minced onions
2 Tbsp white vinegar
1 tsp dry mustard
3 lbs chicken thighs / skin removed
Preparation:
Pre-heat oven to 350.
In a small saucepan, stir together grape jelly, ketchup, onions,
vinegar and dry mustard. Heat over medium-high flame until
mixture comes to a boil and jelly melts.
Arrange chicken thighs in a 13 X 9-inch baking dish. Pour sauce
evenly over the chicken and turn pieces to coat both sides.
Bake uncovered for 1 hour or until chicken is very tender.
Makes 4 - 6 servings -
