November, 2003 _A Thanksgiving Prayer_
Lord, we humbly ask Thy blessing
on the turkey and the dressing,
on the yams and cranberry jelly,
and the pickles from the deli.
Bless the apple pie and tea
bless each and every calorie.
Let us enjoy Thanksgiving dinner
tomorrow we can get thinner.
For all Thy help along the way
we're thankful this Thanksgiving Day,
we're thankful too, for all our dear ones,
all the far away and near ones.
Although we may be far apart,
we're all together in my heart.
Keep us in Thy loving care,
this is my Thanksgiving prayer.
PS Anyone who wishes may help with the dishes.

Four Seasons Restaurant
Cranberry Relish
2 cups Granulated Sugar
2 cups Water
4 cups Fresh Cranberries
2 fresh Limes (peel and dice into ¼" cubes)
1 fresh Navel Orange ( dice into ¼" cubes)

Into a spice pouch place 4 Cinnamon sticks; 4 Vanilla Beans; 4 slices of Fresh Ginger root (about the size of a quarter) and 1 small Hot Chili Pepper.
Combine the sugar, spice pouch and water into a saucepan. STIR over medium heat until sugar is completely dissolved.
Raise heat & let mixture bubble away for about 8-10 minutes.
( Do not stir during this "bubble" time. )
Add the cranberries, diced limes and orange to the
sugar and spice mixture and bring to a boil.
Stir frequently for 7 - 12 minutes, depending upon the consistency desired.
Remove the spice pouch, lower heat and let stand for
5-10 minutes. Pour into appropriate containers and refrigerate.
This will make about 4 ½ cups of relish
