Ingredients:
2 cups Granulated Sugar
2 cups Water
4 cups Fresh Cranberries
2 fresh Limes (peel and dice into ¼" cubes)
1 fresh Navel Orange ( dice into ¼" cubes)
4 Cinnamon Sticks (or 1 tsp powder)
4 Vanilla Beans (or 1 tsp liquid)
4 slices FRESH Ginger Root (size of a quarter)
1 small HOT Chili Pepper (dried is fine too)

Preparation:
Into spice pouch place Cinnamon; Vanilla Beans;
Ginger root and the Chili Pepper.
Combine the sugar, spice pouch and water into a
saucepan. STIR over medium heat until sugar is
completely dissolved.
Raise heat and let mixture bubble away for about
9-12 minutes Do not stir during this bubble time.
Add the cranberries, diced limes and orange to the
sugar and spice mixture and bring to a boil.
Stir frequently for 10-15 minutes, depending upon
the consistency desired.
Remove the spice pouch lower heat and let stand
for 10-12 minutes. Pour into your containers and
refrigerate.
This will make about 4 ½ cups of relish

December, 2004 Amish Haystack
Many Amish families live in Indiana and this recipe is a favorite
among most of their children. Each builds their own haystack.
Ingredients:
1 lb ground beef
1 pkg. taco seasoning mix (dry)
14 oz jar Newman's Own Sockarooni Sauce
( or 1 ½ cup of your own favorite sauce)
1 ½ cup shredded Cheddar cheese
(or cheese sauce, which most prefer)
2 cups crushed, tortilla chips, preferred
( or crushed soda crackers/saltines )
2 cups cooked rice ( instant or regular)
1 head lettuce, shredded
2 cups diced tomatoes
1 cup carrots, chopped
1 cup onions, chopped
1 cup ripe olives, pitted and sliced
1 cup green pepper, diced
1 cup celery, diced
1 cup bacon, cooked and crumbled
1 cup sunflower seeds, or other nuts
11 oz jar Newman's Own Salsa, or your choice of salsa
Preparation:
Brown ground beef, with taco seasoning, in a skillet over med-
high heat. Add spaghetti sauce. Simmer until meat is cooked
through and the liquid evaporates.
In a saucepan,make a cheese sauce, or use canned cheese
soup and add milk. Keep warm.
Put remainder of the ingredients in separate bowls. Let each
person serve themselves, layering as follows:
lettuce // chips or crackers // meat mixture // rice //
tomatoes // carrots // onions // olives // peppers //
celery //crumbled bacon //sunflower seeds // salsa //
and end with warm cheese sauce.
Serves 4, nicely.
