September, 2004 Barbie Chop Quartet
Ingredients:
4 Boneless Pork Loin Chops, 5-6 oz. each, trimmed of fat
1/3 cup Orange Juice
3 tblsp Honey
3 tblsp Ketchup
1 tblsp Lemon Juice
3 tsp Chili powder
3/4 tsp Cumin
Preparation:
Arrange pork chops in a glass baking dish.
Whisk together the remaining ingredients in a small bowl.
Pour over the pork chops.
Turn each chop over until both sides are thoroughly coated
in the marinade. Cover with a plastic wrap and refrigerate
over-night, if possible. (else 4 hours)
Preheat grill.
Cook pork chops over hot coals for 6 to 7 minutes per side,
basting with what's left of the marinade. Serve immediately.

October, 2004 Green Tomato Bread
If you like fried green tomatoes - you'll love this. It's really worth
the effort!
Ingredients:
3 cups all purpose flour
1/4 tsp baking powder
1 cup baking soda
1 tsp salt
2 cups granulated sugar
1 Tblsp cinnamon
2 large eggs, lightly beaten
1 cup vegetable oil
1 tsp vanilla extract
2 cups tomatoes, finely chopped or ground (2 medium)
1 1/2 cup chopped pecans
Preparation:
Preheat oven to 350 degrees. Grease and flour two (2) 8" X 4"
loaf pans. Combine all dry ingredients (1st 6 items) into a large
bowl and make a well in the center of the mixture. Combine
oil, eggs and vanilla extract, stirring just until moistened. Then,
fold in tomato and pecans.
Spoon batter into the 2 loaf pans.
Bake for 1 hour or until a toothpick inserted in center, comes
out clean. Cool in pans on a wire rack for about 10 minutes.
Remove from pans and let it cool completely on the wire rack.
